What is Calrose Camolino Medium Grain Rice
Calrose Camolino is the most recognized medium grain variety in the world. It is the most popular of the medium grain rice varieties, making up a very large portion of the annual global rice crop. The grains are soft and stick together when cooked. It absorbs flavors beautifully and holds together well in soups and in salads. This versatile grain makes an excellent table rice and is also perfect for Spanish and Arab style dishes as well as Mediterranean and Asian cuisine such as paella, pilaf, and rice bowls or sushi. The name Camolino comes from the oil that is used to coat the rice which provides a glossiness once cooked. This is particularly preferred by middle eastern consumers.

It can also be called Egyptian Camolino Rice or Calrose Camolino Rice or Calrose. It has a unique taste, beautiful pearl colour and the rich and tempting aroma is irresistible.

Recommended shelf life is 24 months from the date of manufacture when stored under clean, cool, and dry conditions free from infestation.

The Camolino rice is a Japonica style rice. This means that it is best when prepared using a rice cooker. However, on the stovetop you may combine 1-3/4 cups water with 1 cup of rice. Bring to the boil over high heat. Once water boils, lower heat to a simmer and cover. Cook at a simmer until water is completely absorbed and rice is tender. Remove from heat and fluff rice gently with a fork and serve.

What is Parboiled Rice
The word parboiled originated in English and it is derived from the agglutination of partial + boiled, which means “partially boiled.” It is not glued or waxed rice, as many think.
The parboiling process is based on the hydro-thermal treatment which paddy rice is subjected to, and it is solely executed by the action of water and heat without any chemical agent.

The parboiling process is performed through three basic operations:
Water-logging: paddy rice is placed in tanks with hot water for a few hours. In this process, the vitamins and minerals that are in the seed peal penetrate into the grain as it absorbs water.

 

Gelatinization: Main Process
– Wet rice is subjected to a higher temperature under steam pressure, causing a change in the structure of the starch. At this stage, the grain is more compact and the vitamins and minerals are fixed inside.

 

Its advantages are:

  • Rich in vitamins and minerals due to the parboiling process;
  • When cooked, is always fluffy;
  • Yields more when cooked;
  • Requires less oil in preparation;
  • It can be reheated several times maintaining its properties;
  • High degree of hygiene during processing;
  • Preserved longer.
